#29 Garden Variety IPA - Jan 2015

Wake up and smell the lavender. This beer was inspired by my backyard...literally. What are we going to brew for the next Hopfest and The Alehouse Project? What am I going to do about this massive lavender bush encroaching on my hop plants?!? BINGO BANGO BONGO! Henceforth came the lavender IPA. This one is of the "West Coast" garden variety of IPA, meaning it's rather lean on the malt and rather heavy on the hops. It finishes dry thanks to the help of some Austrlian honey and the lavender just sneaks in under all of those massive hop flavours.

#28 Spikey Punch - NYE 2014/15

The Alehouse asked and the Alehouse has received! A beer to celebrate the passing of the year in true Make Beer style. A fruity IPA that has been embellished with the addition of French oak and Caribbean coconut rum that impart a decadent touch of vanilla and the smooth taste of tropical paradise. This is the beer to help you party like it's 1999!

#27 Rooibos Lemon Summer - Dec 2014 

South African Rooibos is a fairly subtle red tinted tea and is often consumed with a squeeze of lemon in the tea cup. We've gone for a lighter German style beer, with a base of pilsner and wheat malt that will let the tea flavours shine through with some added lemon peel in the boil.

#26 Oolong E.S.Tea - Dec 2014 

Chinese Oolong is an earthy, woody and subtly fruity tea that is made through it's own fermentation process. We've combined it with an ESB recipe where balanced caramel malt and floral British hops play well off that earthiness.

#25 Red Rosey Grey - Dec 2014 

This beer is modeled after an American west coast red ale, big malt and big hops. We've used some citrusy American hops that play well with Earl Grey tea, the real twist however is the addition of rose water and vanilla that throw a curve-ball into the mix. Sounds weird yes...think hop-infused Turkish delight.

#24 Jan Juc IPA - Dec 2014 

Originally a homebrew recipe we made last year, named after a surf beach on the opposite end of the bay from Gunnamatta (due to the Yeastie beer fame)...this ipa is made with Lapsang Souchong, a chinese tea that adds very intense campfire smokiness in flavour and aroma. It's miles away from Gunnamatta...well across the bay indeed.

#22 Young Bluey - Nov 2014 

Red on the outside but True Blue on the inside, Young Bluey is our interpretation of an Irish Red Ale that's been brewed using sweet potato and pumpkin in the mash-tun. This is not the spiced "pumpkin pie" style beer that you may love or hate...no cinnamon, nutmeg or any spices for that matter, have been used in this beers creation. Instead we have a nuanced red ale where the sweet potato and pumpkin add an earthy character that melds with British hops  which then in-turn push up some bitterness and floral tones against a big malt backbone. This one is all about balance, making it quite easy drinking indeed.

#21 Santa Suit - Oct 2014 

One keg only of our un-oaked fruitcake old ale, cellar aged for 3 months and specially released for Sydney Craft Beer Week, Xmas is coming a little bit early to our beloved Syneysiders. Brewed with more sultanas, raisins, cherries, currants, candied peel and candied ginger than you would typically use for holiday baking. The only thing we didn't chuck into the boil was the kitchen sink. Merry SCBW!

#20 Auld Salty Mutchkin - Oct 2014 

This isn't the typical Wee-Heavy, boozy type of Scotch ale that may come to mind when thinking of the style. It's more similar to an 80/- (eighty schilling), a classic easy drinking scottish export ale with subtle caramel notes, designed to be downed by the pint in the motherland. Our twist is a salt addition that accompanies and balances with the caramel notes, playing off the classic ice cream flavour salted caramel. So if yer oot yer face er aff yer heid drink up and let's gang play some golf on the hillside, Aye!

#19 Ctrl-Alt-Del - Sticke Alt IPA - Sept 2014 

Another Hopfest means another IPA. This one rolls in with big bitterness units, but is backed up by a hefty German inspired malt bill that has nothing to do with IPA's at all. Sticke Alt, meaning "secret old" is a strong and malty but clean style that usually comes with a noticeable hop element. Ours brings you biscuit and bready malt with excessive hopping to gear it up for IPA country. Double dry-hopped with our secret and proprietary blend of hops listed below and steady whispers of Nietzsche into secondary fermentation bring out cunning citrus aromas that will set a new precedent for Americans and Germans getting along swimmingly.

There's nothing quite like the waft of fresh, warm apple pie floating through the spring air from a neighbouring window sill...or better yet, sitting down at grandma's table waiting with restraint to bury your face in the stuff...or maybe not quite as special but also quite nice, stumbling your way to McDonalds at some ungodly hour for a baked pie or three. Well then, presented by such nostalgic moments of youth we present to you a very similar experience; our widest release yet in spring ponys, pots, schooners and pints around Victoria and NSW.

#15 A Russian in Kentucky - oaked RIS - July 2014 

So that beautiful French woman we told your about in "A Parisian in Moscow" has officially had a sex change, been approved for her Russian citizenship, grown all kind of hair in places that shouldn't have hair, and has taken a little vacation to Kentucky! This is a same-same-but-different Russian imperial stout originally released back in May that has been sitting on American oak. ...And holy crap does it add a set of woody balls to what used to be a sensual and luxurious beer experience. This beer will put hair on your chest, even if you're a beautiful French woman. What a portrait indeed…

#14 Bangkok Nights - June 2014 

What the hell is a California common anyhow...an ale, a lager, hoppy, not really that hoppy? We present to you, the black California common. Riffing off of Siam Steam Limed, our fourth beer ever released, Bangkok Nights is effectively the same beer darkified, and winterfied. Coming in slightly higher in alcohol, this iteration of steam beer is brewed with restrained use of midnight wheat for a dark colour and minimal roastiness. It's a bit of a trickster being rather black, but very light in body and extremely thirst quenching with the additional of kaffir lime and lemongrass. A winter refresher.

#11 Roman Recess - May 2014 (GABS)

We like to think that all of our beers are fit for a king, but this one folks, is fit for a bloody Emperor! Based on the highest quality artisanal bread you might have found around the forum we focused on wheat, rye, dried fig and fennel seed as the key ingredients for a massive 100 IBU Imperial IPA. Even if not true to the formative Roman years, this juicy number will knock your wreath off.

#9 MumbaIBA - March 2014

Our good friend, kind and faithfully delicious IPA has been bastardized once again. This beer has, to a certain extent, taken itself both back to its roots and stretched itself quite far from its origins all at the same time. MumbaIBA is truely Indian, having been brewed with a house-roasted custom blend of green cardamom, black cardamom, cinnamon, cumin seed, coriander seed, black pepper and clove...a blend also known as garam masala. Mumbai (for short) is also quite un-Indian, having been brewed with American hop ethos, and a pile of bold roasty malts. We threw in heaps of Magnum, Columbus and Tettnang to give this brown coloured IPA it's bite.

#8 Planisbeer - March 2014

Planisbeer, a beer inspired by the sprightly, agile and graceful nature of the people of Planisphere. As such it weighs in at 4.8% ABV keeping it light on its feet. A golden aura surrounds the beer, giving it a clean and delicate body and quaffable character. It is twisted with a hint of orange blossom bringing a soft aromatic bouquet, and liquorice root adding a subtle but earthy sweetness. A beer to celebrate at any pop!

#7 Castagnaccio Bock 

Thus-far the biggest beer we've ever made is "naturally" inspired by an Italian dessert. The dessert we're loosely following is kind of like a dense fruit-slice, but it's made with chestnut flour and includes an assortment of sultanas, nuts, dried fruit and often a couple of savoury spices. Our variation focuses on a biscuity rich and nutty malt backbone, with ripe dark fruit, raisins, plum and finally rosemary settling into a full and viscous mouthfeel. Think Italian forest floor...or Nonna's backyard garden.

#6 Oat World IPA – February 2014

An English IPA with American enthusiasm, this beer is bigger and bolder than your typical English style IPA but it's ingredients are still all the Queen's. The malt bill is rounded out with a significant amount of oatmeal to provide a silky and full mouthfeel. UK hops are abused in both the boil-kettle and fermenter (dry-hopping!) to provide firm bitterness and punchy aroma expected from a contemporary IPA of today, even if it's origins are in the Old World.

#5 Blackforest Bebop – February 2014

Everything tastes better when you add bacon...amiright folks??? This rule is no longer restrained to breakfast, lunch and dinner. The core of this beer is a blend of six malts, the most prominent being a German beechwood smoked variety known for it's porky flavour profile. But hey, bacon isn't bacon without bacon, so yes we threw in some bacon...and a handfull of Jasmine flowers to keep the bacon company and provide a bit of balance.

#4 Siam Steam Limed – February 2014

A clean and crisp easy drinker, Siam Steam Limed is an ale/lager hybrid inspired by Asian fusion and sweltering jungle. We started with a straightforward pale malt bill with a dash of medium crystal for colour. This beer is hopped with tropical tasting varieties to bring forward notes of passionfruit, stonefruit and a hint of apricot. Finally we infused the brew with kafir lime leaves and lemon grass at the end of the boil to solidify a refreshing burst of Thailand...formerly known as Siam.

#3 Flor'da Grove – February 2014

This beer might initially remind you of the so-called summer or golden varieties of beer that have been hitting the shelves around Australia...do not be fooled, this is an American Wheat with flavour cranked up to 11. It's very citrusy and juicy. I could have sworn that someone squeezed an orange or grapefruit into the beer...but it's all hops. A bit tart and lightly estery on the yeast profile. Firm bitterness on the back end but still very approachable.

#1 Deep Steep – December 2013
